College Cles that'd benefit in a Print Shop?

Right now I'm working as a Pressman's Apprentice and part time with his son making signs and decals with vinyl. I'm starting college, sometime eventually, this fall and I was wanting to take some courses that correspond and benefit with my work. I was suggested to CAD/AutoCAD and some Editing Program courses but a lot of colleges don't really...teach about the programs a lot of print shops use. A few examples of the things I do are..: type setting, business cards, printing press, resume's, brochures, pamphlets, invitations, photo editing, image sizing and reduction, computer cut lettering/vinyl cut lettering and image decal......so forth. Any suggestions off of any of that I'd appreciate.
