Since Israel and Palestine come from the middle east, how come the two nations look so different?

Have you ever noticed that when you see a Jew in New York, or a Jew in Isreal, or a Jew in Russia., they all have fair features. THey do not look middle eastern.. yet they came from that area (Israel). Even the Jews right there in the Holy land, they do not look like Arab peoples. Another thing, Israelis like Leonardo DeCaprios girlfriend Bar.. and Israeli actress Natalie Portman... they are fair looking. Was Jesus fair complected or did he look Arab? I hope this question doesnt sound racist, its just that I do not get how two people from the same region (Jews and Palestinians) can look so different. Or am I misinformed and are Jews in that region very dark and I am just not seeing it?
